Marinated, Gridled Chicken

Ingredients – Serves 2

Marinade

25ml olive oil

10ml light soy sauce

5ml dark soy sauce

10g honey

1 tsp paprika

1 tsp mixed herbs

1 tsp garlic granules 

20ml lemon juice

pinch salt and pepper

Griddle pan - if you don't have one frying pan is fine

Main Ingredients

2 large chicken breasts - butterflied 

300g baby new potatoes

10g butter/margarine

1tsp mixed herbs

Vegetables of your choice - I really like frozen mixed vegetables if I'm short on time (150g per person)

Method

  1. Make your marinade - take all of the ingredients and mix them together in a large bowl, adding the chicken breasts and rubbing it into the chicken.  Cover with a plate/clingfilm and place back in the fridge. (You can do this up to 24hrs before you plan to cook it - the longer it marinades the better it will taste)

  2. Add your potatoes to some boiling, salted water and cook until soft all the way through

  3. While the potatoes are cooking heat up your gridle pan/frying pan on a high heat (to make sure it is hot enough sprinkle a bit of water on it - it should sizzle)

  4. Add your chicken to the pan and cook for approx. 5-6 minutes each side until the chicken is fully cooked all the way through - let them rest on a warm plate 

  5. Cook your vegetables as per instructions while chicken is cooking/resting

  6. Drain your potatoes and add them back to the saucepan.  Put the butter in the pan along with salt, pepper, mixed herbs.  Stir until butter melted and potatoes covered in butter.

  7. Dish everything out and enjoy!
