Nicoise Salad

Ingredients – Serves 1

80g lettuce of your choice – I liked mixed lettuce

30g cubed cucumber

80g tomatoes – I like cherry tomatoes

20 g olives cut in half

Half can tuna

1 boiled egg de-shelled

15g light mayonnaise

5g mustard – I like Dijon

Pinch salt and pepper

Squeeze of lemon juice – optional

Slice of crusty whole meal bread to serve (optional 5g butter/margarine)

Method

  1. Hard boil your egg – approx. 7-8 minutes and take the shell off – leave to cool

  2. In a bowl add your lettuce, tomatoes, cucumber, olives and toss together

  3. Add this mixture to a plate and cut your egg into quarters and scatter on the salad

  4. Drain your tuna and flake half of the fish over your salad

  5. In a small bowl or a mug, mix together the mayo, mustard, salt and pepper.  If adding a squeeze of lemon add it to the bowl and mix together thoroughly

  6. Using a teaspoon drizzle the mixture over the salad and enjoy!

If you want to serve this for dinner try adding some baby potatoes, sliced green beans and onion.
